Soak the Tigernuts in water for 48 hours, changing the water 3 times per day both days.

Slowly add (while stirring) about 1 liter of filtered water and 250 grams (about 1 cup) of sugar. Mix until there are no lumps.
Cover and allow to sit in the refrigerator undisturbed for at least 2 hours.
